The investigation focused on so-called <strong>microgreens<\/strong>, or vegetables harvested shortly after planting that are particularly rich in nutrients, vitamins, minerals and antioxidants.<\/p>\n<p>&#8220;Microgreens and sprouts are similar but they are not the same thing,&#8221; says a <a href=\"https:\/\/www.psu.edu\/news\/research\/story\/biofortification-microgreens-zinc-could-mitigate-global-hidden-hunger\/\" target=\"_blank\" rel=\"noopener\">statement<\/a> from the U.S based university. &#8220;A <strong>sprout<\/strong> is the first stage in a plant&#8217;s life cycle after the seed germinates. When the baby plant grows beyond its first shoot and root, it transitions to the microgreen stage. According to <strong>Francesco Di Gioia<\/strong>, professor of plant crop science and coordinator of the research group, simply soaking seeds in a zinc solution proves effective in producing particularly nutritious microgreens.<\/p>\n<blockquote><p>All of this is done <strong>without genetic engineering<\/strong>. That means this strategy can be easily replicated anywhere.<\/p><\/blockquote>\n<p>&#8220;We were thinking, how can we increase the content of zinc in microgreens, developing a very simple way that people could use at home in a \u2018microgreens growing kit\u2019 that could be delivered in an emergency situation,&#8221; explained <strong>Pradip Poudel<\/strong>, Ph.D., a doctoral student and co-author of the study. &#8220;And we know it will be important to include a fertilizer source for zinc so people will just have to soak the seeds before putting them in germination.&#8221;<\/p>\n<div class='avia-iframe-wrap'>\n<blockquote class=\"wp-embedded-content\" data-secret=\"sk51Tyha9d\"><p><a href=\"https:\/\/resoilfoundation.org\/en\/articles\/biochar-saline-soils-bangladesh\/\">Biochar provides relief for saline soils in Bangladesh<\/a><\/p><\/blockquote>\n<p><iframe loading=\"lazy\" class=\"wp-embedded-content\" sandbox=\"allow-scripts\" security=\"restricted\" style=\"position: absolute; clip: rect(1px, 1px, 1px, 1px);\" title=\"&#8220;Biochar provides relief for saline soils in Bangladesh&#8221; &#8212; Re Soil Foundation\" src=\"https:\/\/resoilfoundation.org\/en\/articles\/biochar-saline-soils-bangladesh\/embed\/#?secret=GC2qmGwd2j#?secret=sk51Tyha9d\" data-secret=\"sk51Tyha9d\" width=\"600\" height=\"338\" frameborder=\"0\" marginwidth=\"0\" marginheight=\"0\" scrolling=\"no\"><\/iframe><\/div>\n<h5>The experiment<\/h5>\n<p>The experiment was carried out in 2021 in a greenhouse at the University of Pennsylvania. Researchers dipped seeds into the <strong>zinc solution<\/strong> and then measured the concentration of the element in microgreens of peas and sunflowers.<\/p>\n<blockquote><p>&#8220;Seed soaked in a 200 ppm <strong>ZnSO4<\/strong> solution resulted in higher Zn accumulation in both peas (<strong>126.1%<\/strong>) and sunflower microgreens (<strong>229.8%<\/strong>),&#8221; the <a href=\"https:\/\/www.frontiersin.org\/articles\/10.3389\/fpls.2023.1177844\/full\" target=\"_blank\" rel=\"noopener\">research<\/a> states.<\/p><\/blockquote>\n<p>&#8220;However, an antagonistic effect on the accumulation of other micronutrients (Fe, Mn, and Cu) was seen only in pea microgreens.&#8221; The authors also observed that soaking the seeds in sulfate and zinc oxide solutions at <strong>higher concentrations<\/strong> had reduced phytic acid in the microgreens of both plants. This lack may be the <a href=\"https:\/\/resoilfoundation.org\/news\/suolo-fame-micronutrienti\/\" target=\"_blank\" rel=\"noopener\">result of soil degradation<\/a>, which in turn generates a loss of nutrients in the fruits of the earth.<\/p>\n<blockquote><p>According to <strong>World Health Organization<\/strong> estimates, <a href=\"https:\/\/www.bbc.com\/future\/bespoke\/follow-the-food\/the-hidden-hunger-affecting-billions\/\" target=\"_blank\" rel=\"noopener\">quoted<\/a> by the BBC, hidden hunger is said to affect mostly South Asia, South America and Sub-Saharan Africa.<\/p><\/blockquote>\n<p>The solution proposed by Penn State researchers could prove useful in addressing this problem. But also, the researchers argue, to provide a solution, at least in the short term, in the event of a <strong>global catastrophe<\/strong>.
